Gehun ki Bikaneri Khichdi, a khichdi made with Whole Wheat. I was surprised when I was searching for khichdi recipes on net. Yes even though my food is influenced based on North Indian cuisine I was not aware of this. Logically speaking wheat is more grown and common in North India and hence a khichdi without rice would be there.

I was keen on making this Gehun ki Bikaneri Khichdi as making with whole wheat fascinated me. The only thing that was holding me off is buying whole wheat. As I was not sure what I will do if I do not like it. I do not have a mill here or the way I use to store wheat to make fresh flour. Finally I bought a small packet this weekend and made it just yesterday.

I was delighted that I did. One of the yummiest and easy khichdi recipe, with a bit of planning as the wheat needs to be soaked for a good few hours. Since the wheat is crushed lightly, I thought it would taste similar to Daliya and Split Green Moong Dal Khichdi. No but the taste and texture of this khichdi is quite different. There was a crunch in every bite, and that’s what I liked the most.

Me and my son thoroughly enjoyed this Gehun ki Bikaneri Khichdi. I enjoyed it the typical way with some spicy Green coriander Chutney , dahi and papad. Ah yum, I am drolling again. One of the healthiest and easy to make one pot meal. I made a very small portion of this, but this can be easily doubled or tripled as per your requirement. I have adapted this recipe from Tarla Dalal’s website.
Ingredients
- 1/2 Cup Whole Wheat
- 1/8 Cup Yellow split Moong Dal
- 1 tablespoon Ghee/Clarified Butter
- 1/2 teaspoon Jeera (Cumin Seeds)
- Salt to taste
- 1-2 Green chilies slit
- 1/4 teaspoon turmeric
- 2 Cups water (we need 3 times the water)
Instructions
- Wash and soak the whole wheat for 8-9 hours or overnight.
- Wash and soak the yellow moong dal for 1 hour.
- When ready to make, wash and drain the water from whole wheat.
- Lightly grind the whole wheat in a mixer, without adding any water.
- In a pressure cooker, add ghee.
- Once hot add Jeera.
- Once the Jeera splutters, add turmeric, ground whole wheat and dal.
- Mix everything for 20-30 seconds.
- Add 2 cups of water and salt as per taste.
- Pressure cook it for 5 whistles. (It will take more than the normal khichdi)
- Switch off and let the pressure settle down.
- Serve it hot with some Green coriander Chutney , papad and dahi.

Using whole wheat berries to make khichdi...awesome. I'll have to try this out when I get back home. Never knew such a khichdi existed.
