Farali Kuttu ki khichdi is a nutritious, healthy, gluten-free one-pot meal recipe made using buckwheat groats, potatoes, peanuts, and spices.

So what is Kuttu or Buckwheat?

Buckwheat belongs to the group of foods called pseudocereals. It is a plant cultivated for its grain-like seeds and as a cover crop. Despite the name, buckwheat is unrelated to wheat, as it is not a grass or does not grow on grasses. Some similar pseudocereals are quinoa and amaranth. Buckwheat is gluten-free. Buckwheat is processed into groats, flour, and noodles. (Source Wikipedia)

Buckwheat for fasting

Eating cereals such as wheat and rice is prohibited during Indian fasting days. Since Buckwheat is not a cereal, it is considered acceptable for consumption during vrat.

This Farali Kuttu ki Khichdi can be eaten during Indian fasting days, like Navratri, Ekadashi, Mahashivratri, Gokul Ashtami, etc.

In India, buckwheat flour is commonly used. It is known as Kuttu ka atta. Puri’s, savory pancakes, and pakoras are made during fasting or the vrat days.

Recipes with Buckwheat or Kuttu

I have eaten buckwheat pancakes a lot, especially when my mom used to fast. I used to like it, especially as it has a slightly glutinous texture. It is soft on the inside and crunchy on the outside. My mom used to make it with Buckwheat flour. Since Buckwheat groats are more easily available here than flour, I made these Buckwheat Pancakes using groats and enjoyed them with Kali mirch ki Aloo ki Sabji.

I also make Buckwheat Sweet Potato Pancakes or this Farali Kuttu aur Singhara ka Dhokla and this Farali Singhara Paratha fasting or not fasting. All these recipes are gluten-free and it helps when you are looking for gluten-free recipes. 

Recipe of Farali Kuttu ki Khichdi | Buckwheat Khichdi

Recipe 1 – With Mint, Clove Powder and Sesame Seeds

I have 2 versions of this recipe. Earlier I used to make this recipe with clove powder, and sesame seeds, when I found it on Mayuri’s Blog. Her pics tempted me to try it out. The Khichdi is done similarly to that of Sabudana khichdi except the groat is first cooked for some 10-15 minutes until done.

This recipe makes the khichdi fluffy and the grains are separate. In this recipe, we cook the groats first and then later on make the tempering. We then cook potato, add the green paste, peanuts, etc, and mix it along with groats. Yummy and Nutritious Khichdi is ready.

Recipe 2 – One pot pressure cooker Kuttu Ki Khichdi

This is a one-pot khichdi where everything is added in the pressure cooker or open pot and cooked. As they are pressure cooked, the groats are a bit soft. So if you need to feed this to toddlers, or old people, who have difficulty eating, this would be perfect.

For this recipe, I simply make a tempering of cumin seeds and green chili. Add, potato, peanuts, groats, salt, and water. Pressure cook the khichdi and it’s done. This Buckwheat Khichdi can simply be enjoyed with curd or raita. Nowadays I like to make this Farali Dudhi Raita or even with this Singdana Raita.

Ingredients

Recipe 1 – With Mint, Clove Powder and Sesame Seeds

  • 1 Cup Buckwheat groat
  • 1 Medium potato peeled and cubed
  • 1 tablespoon Ghee (Clarified Butter) Clarified Butter (One can use oil too)
  • 1 1/4 cup water
  • 1/2 Cup roasted shelled, and coarsely chopped peanuts
  • 1/2 Chopped fresh coriander
  • 1/2 Cup Chopped fresh mint
  • 2-3 green chilies finely chopped
  • 1 teaspoon finely grated ginger or ginger paste
  • 1 teaspoon Cumin seeds Jeera
  • 1 tablespoon sesame seeds Til
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon clove powder
  • 1/2 teaspoon sugar
  • 8-10 curry leaves
  • 1-2 tablespoon lemon juice depending on taste
  • Sendha Namak Rock salt or normal salt to taste
  • 3 cup water for soaking

Recipe 2 – One pot pressure cooker Kuttu Ki Khichdi

  • 1 Cup Buckwheat groat
  • 1 Medium potato peeled and cubed
  • 1 tablespoon Ghee (Clarified Butter) Clarified Butter (One can use oil too)
  • 1 1/2 cup water
  • ¼ Cup peanuts
  • 2-3 green chilies finely chopped
  • 1 teaspoon Cumin seeds Jeera
  • Sendha Namak Rock salt or normal salt to taste
  • ¼ Cup pumpkin cubed carrot – optional
  • 3 cup water for soaking

Instructions

Recipe 1 – With Mint, Clove Powder and Sesame Seeds

  • Rinse and wash the Buckwheat groat in water.
    1 Cup Buckwheat groat
  • Add water and let it soak for 30-60 minutes.
  • In a pot, add 1 cup water and the soaked buckwheat groat.
    1 1/4 cup water
  • Add salt and let the Buckwheat groat cook over medium heat.
    Sendha Namak
  • It will take around 10-15 minutes.
  • To check gently crush 1-2 groats between your hand, it should crush smoothly.
  • Do not overcook or else the khichdi will go mushy.
  • Remove the cooked buckwheat into a plate or a colander and spread it out.
  • Let this cool down completely.
  • In the meantime, create a paste of coriander and mint or finely chop them.
    1/2 Chopped fresh coriander, 1/2 Cup Chopped fresh mint
  • I have not added any water, as I did it in a food processor.
  • If you are making a paste and adding water add as little as you can.
  • In a pan add ghee or oil over medium heat.
    1 tablespoon Ghee (Clarified Butter)
  • Once hot, add cumin seeds and sesame seeds.
    1 teaspoon Cumin seeds, 1 tablespoon sesame seeds
  • When the seeds pop, add curry leaves, green chilies, and grated ginger and give it a quick mix.
    8-10 curry leaves, 2-3 green chilies finely chopped, 1 teaspoon finely grated ginger
  • Add the chopped potato, and very little salt, and let the potatoes cook.
    1 Medium potato
  • More water might be needed (the remaining 1/4 cup) for the potatoes to cook.
    3 cup water for soaking
  • Once the potatoes are done, add the chopped and ground peanuts.
    1/2 Cup roasted
  • Add the chopped mint and coriander and mix well.
  • Now add the coriander powder, clove powder, and sugar and mix well.
    1/2 teaspoon coriander powder, 1/4 teaspoon clove powder, 1/2 teaspoon sugar
  • Add the buckwheat groat and lemon juice.
    1-2 tablespoon lemon juice
  • Mix everything well but gently. We do not want the groats to get mushy.
  • Let this cook for 4-5 minutes, mixing occasionally.

Recipe 2 – One pot pressure cooker Kuttu Ki Khichdi

  • Rinse and wash the Buckwheat groat in water.
    1 Cup Buckwheat groat
  • Add water and let it soak for 30-60 minutes.
    3 cup water for soaking
  • After the groats are soaked, discard the water and rinse again.
  • In a pressure cooker or open pot add ghee.
    1 tablespoon Ghee (Clarified Butter)
  • Once hot add cumin seeds and let it splutter.
    1 teaspoon Cumin seeds
  • Now add green chilies and peanuts.
    2-3 green chilies finely chopped
  • Cook this on medium stirring in between until peanuts are done.
    ¼ Cup peanuts
  • Now add the cubed potatoes, and veggies if using.
    1 Medium potato, ¼ Cup pumpkin cubed

  • Add soaked buckwheat groats.

  • Add water and salt.
    Sendha Namak, 1 1/2 cup water
  • If using a Pressure cooker, pressure cook for 5-6 whistles.
  • If using an open pot, cook it on slow until the buckwheat is done.
  • To check gently crush 1-2 groats between your hand, it should crush smoothly.
  • Open the pressure cooker once the pressure has settled down.
    Cooked Kuttu Ki Khichdi
  • Serve it as is or with some yogurt or Farali Dudhi Raita or Singdana Raita.

Notes

  • Standard US-size cups and spoons are used. 1 Cup = 236 ml, 1 tablespoon = 15 ml, 1 teaspoon = 5 ml
  • Buckwheat takes a little longer to cook, so you would need more than normal pressure cooker whistles.

Farali kuttu ki khichdi looks tempting renu! I have made upma with buckwheat groats, khichdi sounds totally delish, with climate here cold and windy these days, would love to a bowl of this for lunch

Renu, I make Farali Kuttu ki khichadi often but till now have cooked the groats a bit and then added the potatoes. Tried the pressure cooker method following your recipe and wow, it is so quick and easy. Didn't have pumpkin so skipped it.
