Wholemeal and Oats Carrot Crackers are quick and easy eggless and sugar free crackers made in a jiffy using healthy ingredients like Carrot, Gluten Free Oats and Wholemeal flour. They are loaded with superfoods like chia and sesame seeds for health conscious people and has some cheese to please our little ones.

No Baking Soda & Baking Powder
They are a great finger food for toddlers or a perfect munching snack for kids and adults alike.This crackers do not have any baking soda or baking powder in them,. that is they are free from any leavening agent. Just like my Lemon Cake which is free from any leavening agent.
I am back to some healthy baking after a long time. It is the time of our Bread Bakers Challenge and Sneha from Sneha’s Recipe wanted us to make some Crackers. As you know I love baking and specially healthy baking. Hence I was thinking of a recipe where I can sneak some veggies to my crackers with some healthy flours.

A Healthy munching Snack
So I wanted to make something different which I can munch on for my mid evening snacks as well the kids can enjoy. I had some fresh carrots from our local organic farm so decided to use this into some coarse wholemeal flour which was lying in my pantry.
Will you believe me if I say that I made this recipe on the go? Yes I go crazy at times but tried my luck. I also picked some organic rolled oats and added it to the flour and carrot mix. Next I wanted to add chia seeds so skipped the egg and made a chia egg.
Am I done with my experiment? Not really, Added some cheddar cheese and smoked paprika for the flavour with some sesame seeds sprinkled on the top. Thats it all set to be baked in the oven, with fingers crossed that they turn out good.
I enjoyed them with a spread with some yummy Green Tomato Chutney again made with my fresh garden tomatoes last year. My son in the evening told me I ate those crackers mumma while you were away and I loved it. So all in all I am happy with my new healthy Wholemeal and Oats Carrot Crackers bake.

Here goes the recipe for Wholemeal and Oats Carrot Crackers
Ingredients
- 1 Cup Carrot grated very finely or a puree
- 1 tablespoon Chia seeds
- 3 tablespoons lukewarm water
- 1 Cup Wholemeal Flour (One can use wholewheat or all purpose/maida flour too)
- 1 Cup Rolled oats
- ¼ Cup Cheddar Cheese (Parmesan can be used too)
- ½ teaspoon Salt
- ½ teaspoon Smoked Red Paprika
- Sesame Seeds for sprinkling on top
Preparation
- In a bowl add the chia seeds and luke warm water. Set aside for 5-10 minutes.

- In the meantime grate the carrots in a food processor or using a fine grater. It should almost form a puree like consistency.
- Add in the wholemeal flour and give it a quick mix.

- Now add the oats, red paprika, cheddar cheese, chia seeds mix and salt.

- Combine everything. The dough should bind together if not add a teaspoon of water at a time, but it would not be needed.

- Let the dough rest for 10 minutes.
- Preheat the oven to 180 Deg C. Line a baking sheet with parchment paper.
- Take 2 parchment sheets and keep the dough in between.
- Roll out the dough into a large circle or rectangle with ½ cm thickness.

- Sprinkle sesame seeds on the top

- Cut into desired shape.

- Arrange them on the prepared baking tray.

- Bake in a preheated oven for 30-40 minutes.
- Do watch them after 30 minutes or else you would over bake them. They are done when they start turning brown around the edges and are a bit firm to touch.

- Remove and let it cool on the baking tray.
- Once they are cooled completely store them in an airtight container.
Notes
- 1 Cup = 235 ml, 1 tbsp= 15 ml, 1 tsp = 5 ml
- Do keep an eye on the crackers after 30 minutes, as oven temperature differs and you might over bake them.
- One can replace the Chia seed mix with 1 egg if required.
- Instead of carrot one can use Beetroot too.

Unfortunately this didn't work for me. It wouldn't hold together until i had used about 3 tablespoons extra water. I did use whole wheat flour so that could be it? It also was too hard after baking to give to my 14 month old. The flavour was delicate and good.

Hi Sara, Sorry to hear that. As we have different type of flours, their absorption rate differs. Even with the same brand it changes unfortunately. Did you roll it too thin? Ideally this should not be hard as it has carrots in it. For how long did you bake it? Regards, Renu
