Kanda Poha a popular Maharashtrian breakfast recipe and a must in our house on Saturday Morning. Our weekend start seems to be incomplete with this quick, easy and delicious kanda poha.

Poha is flattened rice. Rice which is flattened into flat, light, dry flakes. This dry rice flakes swell when liquid is added to it. It is normally used to prepare snacks or light and easy fast food in a variety of Indian cuisines.

One of my favourites is Poha Chivada. We do make a non fried version and hence is perfect for snacking. Poha can be even eaten by soaking in plain water or milk in savory or sweet form too.

Indori poha is very famous and I remember we eating this poha at Indore Junction always during our summer vacations to North India. As with many Indian recipes there are different versions of this poha. At my mom’s place it is made without onion and with potato and green peas.

My taste buds have changed and I make it with onion and peanuts. The peanuts adds a nice crunch to this. I also add a tiny bit of sugar to give it the khata mitha taste. I know many don’t like it but give it a try, I am sure you would like it.

Amount of water in the poha also dictates the texture of the dish. Some like the poha a bit wet. I soak it just enough so that the rice flakes absorbs water but at the same time does not get mushy. Each and every grain should be separate. I generally clean, rinse and drain any extra water. I leave it for soaking till the time I prepare the tadka or the masala. All in all 7-8 mins of soaking time is enough.

Follow the below steps and you would get the perfect Kanda Poha in 10-15 minutes.


Ingredients

  • 1 small onion finely chopped
  • 8-10 Curry leaves
  • 1-2 green chilly as per taste
  • 1 teaspoon Mustard seeds
  • 2 Cups Poha
  • Salt to taste
  • 1/2 teaspoon turmeric
  • ½-1 teaspoon Red chilli powder (As per taste or optional)
  • 2 tablespoon Red peanuts
  • 2 tablespoon Oil
  • ¼ teaspoon sugar
  • 2 tablespoon Lemon Juice (Juice of half lemon)
  • ¼ cup Chopped Coriander

Instructions

  • Clean, Rinse and the poha well.
  • Remove any extra water. Let the poha rest for 7-8 mins.
  • In the meantime, add oil in a kadai or a pot.
  • Once the oil is a bit hot add the peanuts.
  • Shallow fry the peanuts for 1-2 minutes.
  • Once they start changing colour, add mustard seeds, curry leaves, green chillies, onion.
  • Saute this until the onion is translucent.
  • Now add the turmeric and Red chilli.
  • Add the soaked poha, salt, lemon juice, sugar.
  • Give everything a nice mix.
  • Make sure the sugar is absorbed or dissolved completely.
  • Add in the chopped coriander and serve.
  • One can garnish with peanuts, coriander and grated coconut as well.

Notes

  • 1 Cup =235 ml
  • 1 tablespoon =15 ml
  • I have added a bit more lemon juice, as I like it sour. You can reduce it to 1 tablespoon if required.
