If you are following my blog you would be aware that I am nowadays experimenting coconut flour a lot. The other day I was baking early morning at 6:00 AM, yeah you can call me crazy, but had to before my office starts. I decided to make some quick bread for my breakfast. Off late I have almost given up whole wheat breads. So I need to have something, which I can toast early in the morning. While the other bakes were getting ready a quick google search landed me on this page and I decided on making this quick Keto Low Carb Coconut Flour Bread.

Texture of the Bread

I was a bit apprehensive as many said the bread did not turn out soft and has a crumbly texture. Offcourse , you cannot compare this with normal wheat flour or plain flour bread. This bread is going to have a tough texture, but soft too. It just uses a few ingredients and uses a lot of eggs. I added a bit of vanilla essence as I was sure it will smell eggs. And if that is the case, I would not be able to eat it at all. Yes coconut flour bakes do smell eggs, especially when they are just coconut flour and eggs. Hence generally they are paired with any chocolate or fruit like bananas.

Baking & Storing

The bread is really a quick bread and is a one bowl bread. Where in you just combine everything and you are done. The bread also does bake quickly enough. You can see my pics, that the top got a nice brown colour. The best way to enjoy this bread is to toast it and top it with some jam and enjoy it with your morning cuppa. This bread freezes well too. I have sliced it into individual portions and freeze them. When needed I toast a slice and enjoy for my breakfast.

The Challenge

This month our host Stacy Livingston Rushton, who blogs at Food Lust People Love asked us to bake Quick Bread Loves. I decided to bake this gluten free , keto friendly, grain free, Low Carb Coconut Flour Bread. Ingredients

  • 6 Eggs, at room temperature
  • 1/2 cup Vegetable oil(One can use coconut oil too)
  • 1 tablespoon honey (Optional)
  • 3/4 cup Coconut flour
  • 2 tablespoons Tapioca Flour (One can use arrowroot powder to, optional, makes a lighter loaf)
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking powder
  • 1 teaspoon Vanilla Essence

Preparation

  • Preheat the oven to 180 deg C.
  • Grease a medium size bread pan (approximately 8 * 3 inches)
  • In the meantime in big bowl add in the eggs, Vanilla Essence, oil and honey.
  • Beat the eggs until well combined.
  • Now add in the coconut flour, Tapioca Flour, baking powder, salt.
  • Mix using a wooden spatula to make a lump free batter.
  • Let the batter rest for 5 minutes. This helps the coconut flour to absorb liquid’s.
  • Pour the batter into greased bread pan.
  • Bake until the top is golden brown and a toothpick inserted in between comes out clean.
  • It does take around 30-35 minutes.

Notes

  • 1 Cup = 240 ml, 1 tablespoon = 15 ml , 1 teaspoon = 5 ml
  • Baking time may vary, depending on your oven.
  • Do keep an eye on the bread after 25-30 minutes. The bread gets cooked a bit fast.

Is this really a bread? it looks more like a pound cake - especially with the vanilla.

It is a bread. Pound cake is quite different and is made with equal quantities of flour, butter, eggs and sugar. I add vanilla to mask the flavor of eggs, as when I did not add it I did not like it as it tasted egg. I have mentioned this in the text under the heading "Texture of the Bread"

i tried it just now.... the aroma.isbso flavorful ..This is my first time to try the coconut flour bread and it turned out good. Ill make this next time .but, instead of kosher salt ill be using just the regular it turned out to be too salty because mine is in rock salt form .. but the rest is perfect.Thank you for sharing ! losing weight will be fun ! Now i get too learn alternatives what to eat without cutting out breads.

I've yet to try baking with coconut flour only. I know my niece keeps on pestering me to try out a recipe for her kept diet. Perhaps your bake may encourage me to try it out. Coconut Flour Bread looks good and love the golden brown crust.
