Baked Jackfruit Rags Fries

Baked Jackfruit Rags Fries are a simple and a quick 4 ingredient recipe made using Ripe Rags of Jackfruit. They are crunchy, delicious and addictive munching snacks. Completely vegan and gluten free and one of the best recipes which uses food waste, a part of fruit which many think is inedible.

This fries needs just 5 mins of preparation. The rest of the cooking that is the baking is done by the oven while you are busy with other chores. If required you can even skip the pepper and give this as a healthy munching snack for your kids or toddlers.

So what is Jackfruit?

Jackfruit is a nutritious and healthy tropical fruit. Its origin is in the region between the Western Ghats of Southern India and the rainforests of Malaysia. (source Wiki).  It is known as one of the largest size fruit and has a sweet flavour. The raw Jackfruit is generally used to make dry and gravy vegetables. Desserts are even made using Jackfruit.

What are Rags

Baked Jackfruit Rags Fries uses the ripe rags of Jackfruit which is generally thrown by most of them. Many think they are inedible, but no, they are edible. They form a large part of the fruit and why waste something when you can make something crunchy, yummy, healthy and delicious.

The ideas of using the rags came to my mind when I recently bought a part of Jackfruit. Jackfruit is one of my favourite summer fruits. The moment I see them, I buy them. So when I was removing the fruit pods I was thinking, can I use this Rags? They look edible to me. Quick google and found that the rags are edible too. Generally the unripe rags are being eaten as a barbecue alternative by the vegetarians or vegan. 

I decided to save them and thought of making some spicy curry first. Then I thought of baking them. I simply cleaned them, cut them into thin strips, added some rice flour, red chilli powder and salt. Left it on the counter for 10 minutes so that the rags release moisture. Then all I did was just baked them for 30-40 minutes. At the end of 10 minutes I drizzled a teaspoon of oil to add the extra crunch. We enjoyed this along with our tea.

Here goes the recipe for Baked Jackfruit Rags Fries

Ingredients

  • 1 Cup Ripe Jackfruit Rags 
  • 2 tablespoon Rice Flour
  • 1 teaspoon Red Chilli powder (to taste)
  • 1 teaspoon Oil
  • Salt to taste

Preparation

  • Clean the Jackfruit Rags. They would be hard (see pic below) on one side where it would be attached. Discard that.

  • Cut the left out Rags into thin strips.

  • Add Rice Flour, Chilli powder and salt.

  • Mix everything and let it sit for 10 minutes.

  • In the meantime, preheat the oven to 180 Deg C. Arrange a baking tray with parchment paper.
  • After 10 minutes you will find that the Jackfruit Rags have released some water and the flour has coated to the rags.

  • Spread the rags on the tray and let this bake for 15 minutes, turning in between.

  • Drizzle the oil on the rags and give a quick mix so that the oil is coated. This step is optional, but it adds a nice crunch to the Jackfruit  rags.
  • Now  bake again for 5-10 minutes or until they are nice and crunchy.
  • Be careful they might over bake and burn. But let them go a bit brown as they would taste better and will be crunchy.

Notes

  • 1 Cup = 235 ml, 1 tbsp= 15 ml, 1 tsp = 5 ml
  • Keep an eye on the rags, as the baking time will vary, depending how how it is cut and the oven temperature.
  • One can even fry them instead of baking.
