Avocado Stuffed Celery Sticks (Oil-Free)

Avocado Stuffed Celery Sticks are light and refreshing appetizers or a side to your mains. They are delicious and crunchy low-carb, dairy-free, oil-free snack recipes.

Done in a few minutes and with just 4-5 main ingredients this guacamole stuffed celery sticks tick many of the dietary boxes. Loaded with healthy fats these healthy and no-cook sticks are a great way to consume some celery and avocado.

I love to consume celery sticks and celery juice, celery smoothies or simply munching celery are great options to consume them. But in day-to-day life, it is not easy to make a juice of it daily and it becomes boring to consume it raw.  

Recipes with Celery

So I find recipes or ideas to consume this healthy goodness. I make this Celery Chutney which is light and refreshing and goes well with almost all kinds of bread and flatbreads. Celery and kale paratha is another delicious idea that is also good for travel or picnic food or goes well in lunch boxes. Celery Rhubarb Pico de Gallo is another refreshing salsa that is again a healthier way to consume celery and goes well as a side.

Recipe of Avocado Stuffed Celery Sticks

Today I thought of making a delicious snack from these two healthy foods. I simply mashed some avocado and added garlic, chives, and green chilies to it. A little lemon juice and salt are added for taste. This mixture is then simply stuffed in celery sticks and a refreshing no-cook appetizer is ready in minutes.

Ways to use the filling of celery and avocado

And if you do not want to stuff the filling in the celery, try this Open-Faced Celery Avocado Sandwich. Here I am adding a little cheese in the mix of celery and avocado to make some healthy appetizers. Top the filling on some crackers or biscuits, or simply use it as a dip for breadsticks.

Dietary options 

This appetizer is completely vegan, gluten-free, and dairy-free. If one likes and is okay with dairy and non-vegan options, one can add some cream cheese to this. 

Replacements

One can replace the green chilly with black pepper or red paprika powder. Chives can be skipped completely or they can be replaced with parsley or coriander. 

Accompaniments

This avocado mixture can be enjoyed as a dip too with some crackers or chips. Can be enjoyed as a spread on some bread or biscuits.

Shelf Life of Avocado Stuffed Celery Sticks

These stuffed celery sticks are best to consume fresh as it has avocado. If you have some time or want to prepare it well ahead, make the avocado mixture and refrigerate it. Stuff the celery sticks when ready to serve or stuff the whole and refrigerate and cover it with a cling film. At times one might get a black layer on the top due to the oxidation of avocado. One can discard that and use the remaining.

Equipment

Ingredients

  • 1 Ripe Avocado
  • 1 tablespoon chives chopped
  • 1-2 green chilies finely chopped
  • 1 tablespoon lemon juice
  • Salt to taste
  • 2-3 Celery Sticks Cut into bite-size pieces

Instructions

  • In a bowl peel and cut the avocado
  • Mash the avocado with the help of a fork.
  • Add in the chopped chives, green chilies, lemon juice, and salt.
  • Mix everything.
  • Clean and rinse the celery sticks into bite-size pieces or as required.
  • With the help of a spoon or a piping bag fill in the sticks with the avocado mixture.
  • Serve
