Some mornings all you need is something hot and fresh from the oven. But baking a bread or a pastry from scratch takes time and for getting it ready for breakfast seems a difficult task. Well not always, if you plan ahead and do the prep work a day before, all you need is to pop it in the oven for your breakfast. This is when my Overnight Apple Cinnamon Breakfast Rolls recipe was invented.

We wanted some hot, fresh and crunchy pastry for our breakfast. That’s when I decided to make this Overnight Apple Cinnamon Breakfast Rolls. All I did was saved a small dough from the Indian Pav / Dinner Rolls batch I was making the previous day. Rolled it, filled it with desired stuffing and left it overnight in the fridge to rise. Next morning I just had to bake it for our breakfast. Isn’t that easy peasy?
Fillings one can use
One can use a filling of their choice in this. I have added apples, almonds and layered with a mix of butter and cinnamon. One can use chocolate or even a savoury filling. The possibilities are endless. I used the combination of apples and cinnamon as it goes well together.

Few Points to take care
The overall process is quite simple. But just need to be careful of some bits here. The filling needs to be chopped finely or else you will not be able to roll out the dough properly. It might tear as the dough would be a bit soft and stretchy. The rolls can be made on the same day too, with proper proofing or else you can let it rise in the refrigerator overnight. If your kitchen is cold you can even leave it over the counter.
The slow rise helps develop taste as well helps you when you need something ready to bake. This rolls also comes in handy when you have a party or guests as they can be made well ahead of time.
Overnight Apple Cinnamon Breakfast Rolls process
As mentioned earlier, I used the dough from my pav batch I was making on the earlier day. Rolled it into a big rectangle. Layered it with Butter and cinnamon. Added some chopped apple and almonds. Rolled and cut into pinwheel shapes of around 1 inch in thickness. Then arrange it in a baking tray. I first let it rise for 30 minutes at room temperature and then let the remaining rise happen in the fridge overnight.

The next morning I just removed it, preheated the oven and baked this cinnamon rolls. My kitchen was smelling oh so good with the cinnamon bake. Removed from the oven, let it cool for 5-10 minutes, and then drizzle some icing sugar paste. Hot , sweet and crunchy breakfast is sorted.
Here goes the recipe for Overnight Apple Cinnamon Breakfast Rolls :
Ingredients
- Around 1 Cup or a small musk melon size of dough. Recipe for dough here.
- 1/4 Cup Chopped Apple
- 2 tablespoons chopped Almonds (Nuts of your choice/optional)
- 1 tablespoon Softened Butter
- 1 teaspoon Cinnamon
Drizzle
- 1 tablespoon Butter
- 1/4 Cup Icing Sugar/Confectioners Sugar
Preparation
Making of the Rolls
- Roll the dough using some dry flour to form a rectangle using 1/2 cm thickness.
- In a small bowl add in the Softened Butter and cinnamon and mix it.
- Spread this mixture using a pastry brush onto the rolled dough.
- Spread the mixture of chopped apple and almonds leaving 1 cm from the edges.
- Roll it into a tight log, sealing the edges.
- Now cut into desired thickness. 1 inch is preferred.
- Arrange this on a greased baking tray keeping enough space in between.
- Cover it with cling wrap or a muslin cloth or a light plastic which and let it rest for 30 minutes on the counter.
- Now let it rise overnight in the fridge.
- Next morning, just when you are ready to bake remove it from the oven and let it sit until you preheat the oven.
- Alternatively you can remove it maximum 30 minutes before baking.
- Preheat the oven to 180 Deg C.
- Bake in a preheated oven for 20-25 minutes.
- Remove and let it cool for at least 10 minutes.
Drizzle
- Melt the butter and add in the icing sugar.
- Mix to form a smooth paste.
- Drizzle this on the rolls and enjoy.
Notes
- 1 teaspoon = 5 ml, 1 tablespoon=15 ml, 1 Cup=235 ml
- Oven temperature varies according to oven. Do keep an eye out after 15 minutes.
