Sugarless & Vegan Apple and Carrot Loaf #BreadBakers

I love baking breads and cakes, but we cannot eat more even if we like it, due to the sugar content. Then there are people who need to avoid sugar and they cannot have their favourite food. So I am always on the look out for things which uses less sugar or where sugar can be replaced naturally or used in alternate forms. So I thought of a theme to host for Bread bakers, that is making bread without white sugar and using fresh fruits.

Using Fresh fruits was the idea so that the sugar can be easily replaced and the bread naturally sweetened. There are natural sweeteners in baking such as Apple, Dates, Banana, Raisins, Carrots to name a few. So I decided to bake this Sugarless & Vegan Apple and Carrot Loaf which does not have any form of sugar. That is no white sugar, no brown, no honey, no molasses and nothing at all, still the bread is sweet and moist and satisfies your taste bud.

Sugarless & Vegan Apple and Carrot Loaf

The sweetness in this bread comes from Apple and a bit from Carrot. This bread is the perfect breakfast bread one would enjoy with a cup of coffee or tea. It uses Spelt flour and not all purpose flour or wheat flour. The bread has a lovely moist texture and has a mild sweetness due to the apples, carrots and raisins. The sweetness also develops after a day, so if you want a sweeter touch give it a rest of a day. This loaf can be enjoyed as is or slightly toasted as a breakfast bread or as a mid evening snack.

I have adapted this recipe from here, with a lot of changes. Also Since I am already doing a Bake-a-thon with my blogging friends I am linking this there too for the Day 5 bake. 

Ingredients

  • 130 gm Grated Apple (I used Green – Roughly around 1/2 Cup when fine grated and 1 Cup when grated a bit thick)
  • 100 gm – 1 Cup Chopped Apple ( I actually used 2 big size apples and divided it 3/4 to 1/4 ratio)
  • 40 gm – 1/4 Cup Grated Carrots (Optional)
  • 30 gm  – 1/4 cup Raisins
  • 30 gm  – 1/3 Cup roughly chopped pecans
  • 5 Tbsp olive oil
  • 2 Vegan Eggs (to make two vegan eggs: 2 tablespoons of either chia seeds or flax seeds mixed with 6 tablespoons warm water. Leave to stand 10 minutes until it thickens)
  • 100 gm  – 1 cup Spelt flour
  • 1 tsp Cinnamon
  • 1 tsp Baking powder

Instructions

  • Preheat the oven to 180 C
  • Grease a medium loaf tin with olive oil.
  • Mix the grated, chopped apple, grated carrot, raisins and pecans in a large bowl.
  • In a separate bowl beat the Vegan eggs and the olive oil.
  • Then add the apple mixture.
  • In a separate bowl sift the spelt flour, cinnamon and baking powder together until well combined.
  • Then fold into the wet mix.
  • Add the mixture to the loaf try, smoothing the surface from the top and bake for 20-25 minutes until a knife comes out clean.

  • Let it cool in the loaf itself kept on a wire rack.
  • Once cool, slice and enjoy.

Spelt is a type of wheat an ancient grain. If you are not able to source it you can replace it with wheat.
