Sticky Honey Sriracha Cauliflower Wings (Baked & Gluten Free)

Cauliflower was never one of my favorite vegetables until recently when many low carb diets came into highlight. I can have it occasionally or sneaked into something, like Pav bhaji, Soup or my Low Carb Cauliflower and Green Onion Fritters, but I would avoid eating it as a vegetable on its own. But yes being a food blogger, the amount of food I eat or taste, I have to maintain my health and waist line too 😀 :D. Hence I try to incorporate some healthy meals for me and my family. Earlier I use to make this Hot & Sweet Crispy fried Cauliflower in Indo Chinese style, (Recipe not yet on blog) , which was fried by coating cauliflower in a batter and they give it a stir fry. Ah it is one of the lip smacking dish we use to have. Hopefully one day I will post its recipe too. But Now I wanted to make something similar but minus the frying, so I thought of making this Baked & Gluten Free Sticky Honey Sriracha Cauliflower Wings.

 

Baked Sticky Honey Sriracha Cauliflower Wings (Gluten Free)

 

 

Cauliflower is a good swap for starchy and comfort foods like mac ‘n’ cheese or pizza crust to name a few and is packed with plenty of nutrients. It is good to keep your bones healthy, helps to detox and strengthen the immune system

Coming to the recipe, this Baked Cauliflower wings, involves coating of the cauliflower in the batter with some herbs and then baking. It is then coated with the Sauce which gives it the real taste. I have used Rice Flour so that people allergic to gluten too can enjoy, but one can use All purpose flour or Maida too.

To get the perfect crispy cauliflower wings, I had to bake them for almost 40 minutes as opposed to the time mentioned in the original recipe. I was really getting impatient with this, but it was well worth a try. I thought I just have to gulp it down and hence I did not even took some nice pics and randomly took some 2-3. So please excuse the pics.

I just made this for myself as was sure this is not going to be liked by my DH. But to my surprise, he told me it is really nice and happy enjoyed half of them. He encouraged me to put this recipe on my blog. The main flavours of this recipe comes from the sauce. The sauce has to be a well balance of sweet and spice to get that lip smacking flavours.

 

So here goes the recipe:

Ingredients

  • 1 head of cauliflower approx. 4 cups of florets
  • 1 Cup milk (Vegan can use milk substitutions or even water will do)
  • 1/2 Cup Rice Flour (All Purpose Flour/ Maida will work too)
  • 2 tsp garlic powder
  • 1 tsp Cumin powder
  • 1 tsp of Paprika or Chili powder
  • ¼ tsp salt
  • ¼ tsp Ground Black Pepper
  • 1 Cup breadcrumbs (I used my homemade, store bought is also fine and one can use gluten free bread)
  • 1-2 tbsp oil for spraying or drizzling
  • For the sauce:
    ⅓ cup honey
    ¼ cup sriracha
    ¼ cup ketchup
    1 tablespoon sesame seeds optional

Method

  • Preheat the oven to 180 C. Line a baking tray with Parchment paper.
  • In the mean time, wash and cut Cauliflower into bite size pieces or florets.
  • Mix the milk, Rice flour, Garlic powder, cumin powder, paprika, salt and black pepper and make a smooth batter.
  • Place the breadcrumbs in another bowl.
  • Dip each floret or a batch of 4-5 florets in cauliflower , shake off the excess batter and then dip into the breadcrumbs.
  • Roll the breadcrumbs all over and line it on the parchment paper.
  • Spray or drizzle a tsp of oil all over
  • Bake it until crispy and golden, turning in between. For me it took around 45 minutes, It depends on your oven, so do keep an eye after 20-25 minutes.
  • Alternatively one can even deep fry until golden on medium.
  • Once baked, in a large bowl, Add the honey, sriracha, and ketchup and give it a quick mix.
  • Remove cauliflower wings from oven and toss in the honey sriracha sauce.
  • Sprinkle with sesame seeds if desired. Serve with any sauce of your choice or enjoy as is.
