Spicy and Sweet Baked Cauliflower Wings (Gluten-Free)

Spicy and Sweet Baked Cauliflower wings or Sriracha Buffalo Cauliflower Wings are a perfect appetizer for your parties, game day or a delicious crunchy meal. These Sriracha Baked Cauliflower wings are easy to make, full of flavour with a bit of spice and a hint of sweetness.

A delicious gluten-free snack for your Superbowl weekend. If honey is replaced with maple syrup and milk with any vegan milk they are a perfect vegan appetizer. They are good as is, but you can always pair it with Ranch dressing and some celery on the side.

Cauliflower Recipes – Indian Style

Cauliflower is not a favourite vegetable of many. But being a low carb vegetable and with so many health benefits it should be incorporated into your everyday diet. I do make my Indian Gobi Aloo Matar ki Sabzi, breakfast Gobi ParathaNo Onion No Garlic Pav Bhaji or Gobi Pakora.

Low Carb Cauliflower Recipes

Yes, I know the above preparations might be not low-carb but for some days it is fine. However, if you are looking for low carb recipes with Cauliflower then you can even try this Mixed Vegetable Soup, Cauliflower and Green Onion Fritters or my Vegan Baked Oats and Vegetable Bites.

Even with so many recipes, and a few more that are not on my blog yet, I am always on the lookout for more recipes. Especially with vegetables like broccoli or cauliflower. So coming to today’s recipe of Spicy and Sweet Baked Cauliflower Wings, I used to make a fried version of this in a slightly different way. However, trying to avoid fried whenever I can and be healthier I came up with this baked version.

Recipe process of Spicy and Sweet Baked Cauliflower Wings

The recipe is quite simple and hardly takes any time. We just need to coat the cauliflower in the batter. Then a second coating of bread crumbs and bake. In between turning off the wings helps in uniform baking. The finale is the sweet and spicy sauce mixture which is coated after the wings are baked. 

Baking time for Cauliflower or Buffalo Wings

These Spicy and Sweet Baked Cauliflower wings are very easy to make. But one needs patience for this. And here I mean that it needs a good amount of baking time if you need it crunchy. Baking for 15-20 minutes is not sufficient. 

First, the cauliflower needs to be cooked while baking, so in the start, the oven temperature ranges around 180 Deg C. Later on to get crisp, the temperature has to be increased in the last 10 minutes to 200 Deg C. In all, it will take around 45-60 minutes to perfectly cook and get that crisp texture.

Why are my wings soggy or not crisp?

Consistency of the batter is critical too. If you use a runny batter, it will not coat properly to the cauliflower. As the batter has not coated to cauliflower you will end up getting soggy wings.

So if you need that crunch, the 2 most important things are the batter and the baking time.

What can I use instead of rice flour?

One can use a mix of all-purpose/plain/Maida and rice flour or just all-purpose/plain/Maida flour for this recipe. I wanted to keep it gluten-free and hence I have used only rice flour. Secondly, rice flour adds to crunch and I feel it is one of the essential ingredients.

Can I use Maple Syrup or granulated sugar?

I have used honey here as a sweetener. But one can use maple syrup or even powdered sugar too. Sweetener here is used to balance the spices and give them a nice sweet and spicy taste. So as long as your sweetener gets dissolved or is coated without any leftover granules (if you use sugar) you are good to use any sweetener.

Equipment

Ingredients

  • 1 head of Cauliflower approx. 3 cups of florets
  • 1 Cup Milk Vegan can use milk substitutions or even water will do
  • 1/2 Cup Rice Flour (All Purpose Flour/ Maida will work too – But for Gluten tolerant)
  • 2 teaspoon Garlic powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Paprika or Chili powder
  • ¼ teaspoon Salt
  • ¼ teaspoon Ground Black Pepper
  • 1 Cup Breadcrumbs (I used my homemade, store bought is also fine and one can use gluten free bread)
  • 1 tbsp Oil for spraying or drizzling

For the sauce:

  • 1/3 Cup Honey / Maple Syrup / Powdered Sugar
  • 1/4 Cup Sriracha – Red Chilly sauce can be replaced with Sriracha
  • 1/4 Cup Ketchup
  • 1 tbsp Sesame seeds optional

Instructions

  • Preheat the oven to 180 C. Line a baking tray with Parchment paper.
  • In the mean time, wash and cut Cauliflower into bite size pieces or florets.

  • Drain and remove any excess water. Pat dry the cauliflower on a clean kitchen towel.
  • Mix Rice flour, Garlic powder, cumin powder, paprika, salt and black pepper.

  • Add in the milk slowly and make a lump free batter

  • Place the breadcrumbs in another bowl.
    Bread Crumbs
  • Dip each floret or a batch of 4-5 florets in cauliflower , shake off the excess batter.
  • Dip the florets in the breadcrumbs.
  • Roll the breadcrumbs all over and line it on the parchment paper.
    Coating of mix along with bread crumbs, ready to be baked
  • Bake it until crispy and golden, turning in between. For me it took around 45 minutes, It depends on your oven, so do keep an eye after 30-35 minutes.
  • Alternatively one can even deep fry until golden on medium.
  • Once baked, in a large bowl, Add the sweetener, sriracha, and ketchup and give it a quick mix.
  • Remove cauliflower wings from oven and coat the sauce.
  • Sprinkle with sesame seeds if desired. Enjoy

Notes

  • 1 Cup = 240 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml (Standard US Cup size)
  • A tip – Use one hand or one spoon to dip the cauliflower in the wet batter and using your other hand coat/spoon it with breadcrumbs. This keeps the breadcrumbs dry and not get messy.

If I have to have cauliflower in the form of this yummy baked form I'm all game for it. Spicy and Sweet Baked cauliflower Wings look so crispy and tempting. I like how you've used only rice flour. Got to try your way. I once used only plain flour and the wings weren't as crispy as I'd wanted them to be.

I too baked something similar and it took a lot of time. I was almost impatient by the time it got done. And I don't think I will repeat that dish again!! But it tasted great. I'm sure your version would have been super yum!!!
