Roasted Garlic and Herb Mushrooms

Roasted Garlic and Herb Mushrooms is an easy and delicious side bursting with flavours of garlic and herbs. Due to the addition of cheese it gets a nice cheesy cheesy texture and also goes well as a topping or filling for an open sandwich.

Well Mushrooms was always an experiment for me as growing up we never had this and it was sort of an exotic dish for us. Earlier whenever I use to bring mushrooms I use to wash it, and completely remove the black part called Gills.  It resulted in hardly anything left. Till date I am a bit uncomfortable in eating that part. So most of the time I use button Mushrooms. More about Edible Mushrooms here.

Well there are many different types of mushrooms available and there are some good recipes with them specially stuffing of the mushrooms. But currently I choose not to experiment much due to the black gills. Well some day I am going to I know, until then I enjoy them in the restaurants :D.

Button Mushrooms

Button Mushrooms also known as common mushroom, cultivated mushroom, table mushroom and champignon mushroom. They are native to grasslands in Europe and North America. The reason I choose this are they are easy to cook and can go in almost any dishes from soups, stews and stir fries. Secondly, since they are immature and white, they do have less black gills. And I am happy to eat them without the black gills :D.

Picking Mushrooms

When picking mushrooms try to pick the ones which have no signs of bruising or sliminess. They should have a crisp look. 

Cleaning Mushrooms

They tend to absorb water when soaked in water. They also get mushy due to this. So it is best to rinse them and wipe them clean with a damp cloth or a tissue. They are best when they are crisp.

Recipes with mushrooms

I try to add them in my soups like this Thukpa (Vegetable Noodle Soup) or in a simple stir fry. They go well in noodles and pasta too. I also make a quick Indo chinese style stir fry where In I generally add this mushroom, corn, babycorn, peppers etc. Another dish which I love is Spicy Garlic Butter Mushrooms in Indian Style. It goes well as a side with Simple Dal and Rice.

Roasted Garlic and Herb Mushrooms

Today’s recipe is a simple garlic and herb roasted mushrooms. The mushroom is quoted with garlic, herbs, vinegar and cheese. One can simply play around the ingredients. If you do not like oregano skip it, add basil or any other herb of your liking. It is them roasted in the oven and 20-25 minutes. A delicious side is ready withing no time. I enjoyed it as a layer on my bread and it was a complete meal for me. And yes do not discard the extra sauce if you have any left, just spread it on bread or use it as a dip for your chips.

So here goes the recipe.

Ingredients

  • 250 grams (around 1-1.5 Cups) button mushrooms
  • 4-5 cloves garlic grated or minced
  • 1 tablespoon Olive Oil 
  • 2 tablespoon of grated cheddar cheese
  • 1 tablespoon Vinegar (I used balsamic Vinegar)
  • 1 tablespoon of mixed herbs 
  • ½ teaspoon salt
  • Black pepper to taste
  • Fresh Coriander or parsley to garnish

Preparation

  • Preheat the oven to 180 Deg C
  • In a baking dish, add the mushrooms garlic, olive oil, herbs, salt and pepper.
  • Mix everything and arrange them so that they are in a single layer.
  • Bake at 180 Deg for 15 minutes.
  • Add the vinegar and again mix everything. 
  • Add the grated cheese on top of it. Bake for 5 minutes.
  • Mix everything and bake again for 5 minutes.
  • Serve it as a side to your main course or as a topping on a toasted bread.

Notes

  • 1 teaspoon = 5 ml, 1 tablespoon=15 ml, 1 Cup=235 ml
  • One can add herbs of their choice.
  • Add red pepper flakes to give it a bit of kick
