So for day 2 of the No cook Dessert Theme for Blogging Marathon I thought of making this energy bites and without any additional sugar. If you have read my earlier post on Sugarless No Churn Strawberry Banana Ice Cream, you will know that I am keen to make desserts without any additional sugar so that everyone can enjoy it guilt free. Even people who cannot eat sweet due to added processed sugar can enjoy this.
My initial plan for this recipe was to use Dates, Nuts and Desiccated coconut. But when I started to assemble the ingredients, I realized I do not have coconut. Now what- either stop and wait till I buy or the other option was replace it with something similar or healthy. And thus the idea of using Oats instead of Coconut emerged. Yes necessity is the mother of all inventions . I did not wanted to add any form of oil in it, but oats are a bit dry . So when I mixed everything in the blender, I added some coconut oil as to bind them in the form of ladoos. I added it one teaspoon at a time, as I did not wanted to over do it. I went just over a tablespoon and I was able to bind the mixture perfectly in nice round shapes. The sweetness in this ladoos comes from Dates. If you likes it to be more sweet , you can add a bit of honey. Also in that case you can skip the coconut oil too as honey will act as a binder.
The ladoos are sweet enough to satisfy your sugar craving and at the same time are source of instant energy. Enjoy it as mid evening snack or dessert. So what are you waiting for, bookmark or pin the link, so that you can enjoy these yum Energy bites.

Dates and Nuts energy bites (Sugarless & Vegan)
- 1 Cup Dates
- 1 Cup Nuts of your choice (I used Almonds & Pecans)
- 1 Cup Oats
- Zest of one Lemon (Can replace with Orange too)
- 1 tbsp Coconut Oil
- Remove the seeds from the Dates.
- Add everything in a food processor or a high power blender.
- Grind it until it resembles a course mixture.
- Take a tablespoon of mixture in your hand and form ball (Ladoo) shape.
- For better results, refrigerate it for 15-30 minutes. That's it, Enjoy, this guilt free dessert.
